Makes 2 - 9x5 loaf pans
A hearty bread with the warm taste of sweet potatoes and the tangy taste of orange juice this is a great way to use your leftover sweet potatoes but canned are fine too
Ingredients 2 cups sweet potatoes 3 cups of white sugar 4 eggs 1 cup vegetable oil 3/4 cup orange juice 3 and 1/2 cups of all purpose flour 1 1/2 teaspoon salt 2 teaspoons baking soda 2 teaspoons ground cinnamon 2 teaspoons nutmeg 1/2 teaspoon of allspice 2 cups of ground nuts, pecans or walnuts (optional)
directions
1) the sweet potatoes need to be boiled until soft in the center, then peeled while still hot,let cool and mash while still warm
2) in large bowl beat together sugar, eggs, and oil.Stir in orange juice and 2 cups of mashed sweet potatoes. In a separate bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, and allspice.Stir flour mixture into egg/sweet potato mixture until just combined. fold in nuts. pour batter into greased pans
3) bake in preheated oven 350 for 1 hr 25 minutes or until golden brown and a toothpick inserted into the center comes out clean
