We've been talking about sweet potatoes ~ so I thought I'd post the recipe for sweet potato casserole. It's the only way I can get Michael to eat them. Not me ~ I'll take them any way I can. 1 especially like baked ~ but with no brown sugar
Sweet Potato Casserole
1 large can sweet potatoes ~ drained and mashed 6 tablespoons butter ~ room temp 2 eggs ~ well beaten 1/2 cup milk 1/2 teaspoon cinnamon 2 teaspoons nutmeg 1 cup sugar
In medium mixing bowl, combine all ingredients and beat until smooth. Pour into grease 2 quart casserole dish. * Bake at 325 for 25 minutes.
Topping: In small saucepan melt 6 tablespoons butter. Add 1/2 cup brown sugar, 1/2 cup chopped pecans, and 1 cup rice krispie cereal. Sprinkle topping mixture evenly over sweet potatoes and bake an additional 20 to 25 minutes (or until topping is bubbly)
* I prefer to use a 9x9" baking dish.

Thanks AB...I love them too, and this recipe brings back good memories of my sister. She was the first in the family to make this, and then we all had to have the recipe. We didn't add the rice krispies though, but that sounds really good...and will try it. (We just made a bigger batch of the other ingredients for topping.) Thanksgiving wouldn't have been Thanksgiving without this back when we were all together. We always used the cake pan too...and there were never leftovers. I love them baked...just like Idahos...with just butter for a topping.

My daughters made something like this a couple years ago (no Rice Krispies though). I liked it heated or right out of the refrigerator. Thanks Aunt Budee.
