I am going to try this using leftover cooked chicken breast. Adjust the amounts to suit your need.
Copycat Arby's Pecan Chicken Salad By KRISTA MARSHALL SERVES 4-6 INGREDIENTS 2 (12.5-oz) cans premium chunk white chicken, chilled and drained 2 gala apples, chopped 1 cup chopped pecans 3 ribs celery, diced ¾ cup mayo 1 tbsp lemon juice 1 cup grapes, halved salt and pepper DIRECTIONS In a large bowl combine chicken, grapes, celery, pecans and apples. Stir well. In a small bowl whisk mayonnaise, lemon juice, salt and pepper. Pour dressing over chicken mixture. Mix well. Serve immediately with croissants, buns, bread, etc.

It turned out delicious! We had it in wraps with some shredded lettuce. I didn't have any celery so I added chopped cucumber. I will definitely make it again.

I mixed mayo with some sour cream for the dressing and left out the lemon juice yummy!
