I had this in a restaurant when we were travelling and decided to make it at home. It turned out delicious.
Cook penne pasta til done. In a big frypan sauté lightly sliced mushrooms and chopped onion. Add fresh spinach to the pan and toss until the spinach is wilted. Heat a container of fresh alfredo sauce- (I used Olivierie brand) and pour over the veg and pasta. Mix in some grated cheese and dump it in a casserole dish.I used a mix of cheddar and mozzerella . Sprinkle on more cheese and some chopped tomato. Poke it in the oven at 375 until the cheese melts.
1 1/2 cups of pasta made enough to feed 2 people and have leftovers. The rest of the measurements are up to you.

That sounds delicious Caroline. Mushrooms and alfredo sauce are my favorites. Good job figuring it out on your own.

I think the restaurant added more garlic to their recipe. I don't like it super garlicy so I just went by taste. I will definitely make this again. I love the spinach and mushrooms in it.
