White Bread (stand mixer) 2 loaves.
Dissolve 1 tbsp yeast in 1 cup very warm water with 1 tsp sugar. Let stand 10 min or until very foamy. Scald 1 cup milk add: 2tbsp (1/8c) margarine 2 tbsp sugar 2 tsp salt add 1 egg (optional)
Beat well. Add the yeast mixture and 3 cups of flour. Beat until smooth. Switch to the dough hook and add 2 cups flour mix on low until the flour is incorporated. Knead with the dough hook for 8 minutes, on low-med. Place in an oiled bowl , turning to grease the top. Cover lightly with plastic wrap and let rise until doubled (1 hr) Punch down, divide in two. Shape into loaves. Place in greased loaf pans, oiling the top. Cover lightly with plastic wrap and rise to double in size. Bake at 400F for 25- 30 minutes.
Brown Bread- Add 2 tbsp molasses and reduce sugar to 1 tbsp. Use 2 cups whole wheat flour 1 cup white flour in the first mix, then 2 cups white flour.

I’ve never had luck with yeast recipes but one of my coworkers at school made wonderful bread and rolls. Enjoy that warm bread Caroline!

that was an activity Rene' and I enjoyed doing over in Sicily, she'd say it it time to punch the dough?
