Microwave Peanut Brittle
Mix 1/2 cup light corn syrup and 1 cup of sugar in microwave safe bowl. Microwave on high for 4 minutes. Add 1 cup of salted peanuts. Microwave for 3 -5 minutes. (mine was ready in 3 minutes) Add one teaspoon of vanilla and one teaspoon of baking soda. (Watch out! It's hot and it foams up) Pour onto buttered cookie sheet. break into pieces.
I used a 4 cup pyrex measuring cup to make this in. I don't have a candy thermometer to test with but after the second stage in the microwave for 3 minutes the syrup formed very hard balls in a glass of cold water.

Caroline, I have nearly the same recipe from years and years ago. It was delicious!
My recipe called for 1 teaspoon of butter to be added along with the vanilla, and microwave 1 minute before adding the baking soda. Also to let it cool at least one hour before breaking into pieces.
Thanks for posting this. I haven't made it in years.
